Leftover Turkey salad

I made this with some of my leftover turkey. You should do it too. It's preeetty yummy. It's good plain, or I'm planning to toss it with some romaine lettuce for more of a salady salad. It would also make a pretty rad burrito. The main TKO

This Turkey will knock you out.....with flavor! ( & tryptophan ). I make this every year for the last few years now. The secret is herb butter inserted in between the skin and the meat. Herb butter :
1 lb of butter slightly softened
1 package fresh thyme
1 package fresh sage
1 large bunch fresh parsley
2 or 3 long sprigs of rosemary

Remove herbs from stems, chop stems from parsley & grind in a small food processer. ( I use the handy magic bullet ). The fresh herbs become a fine powder that you whirl in the quisinart with the softened butter. Do this a couple of days in advance so the herbs have a chance to infuse into the butter. When you go to cook the turkey, let the butter soften a bit ( not too much, detach the skin from the breast a bit by sliding a knife carefully to create a space between the breast & skin. You can now slide your hand in there, and place the butter all over the bird.


Nutty green beans

For Green beans, this recipe is not as healthy as it could be, but it is tasty. Steam green beans & toss with melted butter & fresh lemon juice. Toss with a handful of finely chopped candied pecans.


Roasted butternut squash

Mmm. Roast butternut squash with 2 tblsp olive oil, one tblsp balsamic vinegar and fresh rosemary (powdered or finely chopped). 400 degrees for 45 - 60 minutes. Leftovers go well in beef stew or puree for butternut squash soup.

Couscous!

Bought some couscous blend at Costco. Grilled Chicken, cherry tomatoes, kalamata olives, cucumbers, and a sprinkle of feta cheese. I know it's been awhile since I've posted, and I'll try to get back into the swing of things. Peace.

Moroccan Chicken Salad

First I have to say, this week sucks. And it's only Monday. I have been sick all weekend with a nasty cold. So much that I am working from home today so I don't get others sick. Yes I'm still working, since it's a payroll day. Then about noon, my dog goes crazy and barks like a nut. Great my landlady is here. Surprise! This chicken salad WILL make up for some of this. Roasted butternut squash, canned julienned beets, one hard boiled egg, half an avocado, a sprinkle of almond slivers, and bajarat chicken tossed with Romaine & TJs champagne dressing. my friend Jen shared this recipe with me. Lentil Salad two ways

I made this Lentil Salad last night, it was a cinch to whip up. My friend Jen recommended I try this lentil salad recipe & I am glad I did! Easy!  She also recommended topping with hard boiled eggs (one way) and I also tossed it into my green salad with tomato & cucumber (two ways) Here is the link to the recipe if you want to try it!

Chicken Bean Bean

This recipe was a bit more pretty than it was tasty. Next time I might experiment with a little more Seasoning. Start with 1 lb Chicken rub with 1 tblsp olive oil with 1 1/2 tsps poultry seasoning (which I didn't have so I made it up with sage, tarragon, garlic powder, salt,pepper,and thyme) bake 450 for 15 to 20 minutes. Meanwhile steam 8 oz. grean beans. Drain and rinse one can of white beans. Toss together with 2/3 cup buttermilk.


Ohh fancy salad face !

Sometimes I get fancy with my salad. Herb salad mix with shaved parm, kalamata olives, marinated artichokes, tomato & cucumber. What kind of fancy are you?


Mickey Mouse eggs.

I love these Thomas Bagel Thins, whole wheat. Quick breakfast with 2 fried eggs.

White turkey chili , yum to the yummy!

One big sweet onion chopped and 1 big tbsp of minced garlic sauteed in 2 TBSP of oil 4 to 5 minutes. Push aside and add 3/4 lb ground turkey 1 tbslp taco seasoning & 4 tsp cumin. Cook over medium about 10 min. Add 3 cups white beans 2 cups chicken stock and bring to a boil. Turn down and simmer for 10 minutes. Add puree of 1 cup chicken stock & left over beans ( almost a cup) & 1/2 cup half and half and heat. Add salt & shredded cheese to taste ( I used 1/2 cup cheese ). Yum.

F you cabbage.

I was really excited to try out this recipe. I was even more pissed when I ended up chopping my hand instead. I'm fine, just annoyed. So to get back at this cabbage, I chopped it into a coleslaw. 4 cups cabbage, a few teaspoons sesame oil & red wine vinegar plus an ample tablespoon of toasted sesame seeds. It's a good side dish for teriyaki chicken. Not worth losing a finger over ( which I didn't ).


Edamame Salad peanutty dressing

Basically, this is super delicious. You should fall in love with it. I did. Put water and 3 eggs in a saucepan. Bring to a boil remove from heat and let soak in hot water for 15 minutes. While it's soaking boil 1 & a half cups shelled edmame for 3 minutes then rinse in cold water to stop cooking. Salad assembly : 1 head romaine lettuce, chopped. 3 sliced tomatoes. Peeled sliced hard boiled eggs & edamame. Peanut dressing = 3 tsps peanut butter, 2 tblsps mirin, 2 tblsp water 1 tsp splenda. Blend well (really it takes a minute to fully combine.) Drizzle over salad. Enjoy!

Tawnya & Tanya - It's Trouble.

Went on a really awesome Hike. Cursing my Friend Tanya at 7 am for making me wake up early, but I was so happy when we finally ate lunch down at the whale rock. Hike was about 6 miles total, Lime Kiln in Granite Falls. Beautiful Day, Beautiful friend, and yummy food.  
Lunch was some homemade tabouli & dipper chips ( I know! Cheater! ) but very delish! 


Tabouli - Soak 1 Cup Bulgar Wheat in 1 Cup Water for about an hour. Add finely chopped cucumber (1 whole) 2 Medium tomatoes, one whole head finely chopped parsley, 3 Tbsp Olive Oil & 3 Tblsp Freshly squeezed Lemon juice (the juice of a medium sized lemon). Add some salt & pepper to taste. Serve as a side salad, or with Dipping chips like Tostitos scoops. Yum. Whale rock, I love you.

Teriyaki Ahi

Summertime grilling is so wonderful, I never want summer to end. Teriyaki Marinade is :
1/2 cup sugar free pancake syrup
4 Tbsp soy sauce
2 Tbsp Mirin
Juice of 1 lime
1 Tbsp minced garlic
1 Tbsp minced ginger

I know the pancake syrup thing sounds weird, but trust me it works really well. I marinate the Ahi for only about 30 minutes, then grill, transfer the sauce to a little pan and simmer up a little until it thickens, then drizzle back onto the grilled fish. Served with steamed broccoli & salad.

Eda who hey?

No . Edamame. This is my south beach teriyaki chicken ,
Teriyaki Sauce = juice of 1 small lime, 1 TBSP minced garlic, 2 inch piece ginger peeled & minced, 4 TBSP Mirin, 5 TBSP Soy Sauce, 1/2 cup sugar free pancake syrup. Amounts are approx, I didn't measure out too well. Marinated chicken for 20-30 minutes then grilled. Last 5 minutes grilled 5 plums (halved). Serve with TJs Edamame and leftover teriyaki drizzled over all.


Blueberry Wheat Germ Muffin ?

Soooo much tastier than it sounds I am pleased to report! New recipe from new SB cookbook. I bought the whole wheat pastry flour & wheat germ @ Fred Meyer, Bulk Section. I also added pure almond extract. Yum. & Healthy? How is this happening? I don't know, but I love it.

Chicken Salad it's summertime!

Well mom's over for dinner & she's uber impressed with how healthy we are. Tonight we are having chicken salad! Spring salad, arugula, spinach, grilled chicken, red onion, cucumber, shaved parm, TJs champagne dressing topped with slivered almonds. Yum


Shrimp Quinoa

So I mixed up some of the left over shrimp from last nights shrimp salad, plus some of the Quinoa I made earlier in the week. Tossed in some parsley & parmesan & it's lunch!

Shrimp Salad ! I see you!

Ha! It's kind of a family joke. I am forever threatening to make shrimp salad. Today I found some shrimp on super discount & I couldn't resist making everyone's dreams come true. Salad is Greens, Avocado, Red Bell Pepper, Cucumber. Shrimp is basted with Minced Garlic Olive Oil Red Pepper flakes. Salad Dressing is Jalepeno Lime Olive Oil Salt & Pepper Vinaigrette. New Cookbooks are super fun.

Quinoa?

Why wouldn't you make this superfood? Any food with Super in the name has to be good. Actually this is my first time making quinoa, so I hope it's good. This is a recipe from my new SB diet cookbook (YAY). Quinoa thinly sliced celery , red peppers, basil & a simple olive oil, lemon juice vinagrette. It will be topped with chopped almonds. Tomorrow. When I eat it. That's it for today. You might see a lot more of me this week. Since I have two new cookbooks & can't wait to cook everything in them!

Sunshine in a glass

Make a huge batch of this as often as possible in the summer so you always have some chilled in the fridge. This particular batch has Hibiscus (dried) Mint (fresh) Lemon (Fresh) and Orange Spice tea bags (Tazo I think). You can and should make lots of different kinds. It's fun and easy & hydrating! Plus I feel like when you cut carbs and sugar from your diet (and then limit them) your body becomes pretty acclimated to that way of eating and more sensitive to sweet tasting things. I no longer want 7 or 8 diet sodas every day. Now I really crave this.

Coconut cookie , yep phase 1

Found this cookie recipe online on a very helpful website. I'll post the link later when someone let's me on the computer....Point = Cookies , Phase 1! Coconut unsweetened found in the bulk section at Fred Meyer. I didn't really have a lot of vanilla extract, but for some weird reason I had almond extract! How lucky for me! I used 1 tsp of each.


Not having eggs for breakfast.

Sometimes, you get sick of eggs for breakfast on South Beach Diet. Today is that kind of day. Cottage cheese & tomato for me please. I always hesitated to try this combo, it used to sound super gross...but for some reason now I love it! It's true I'm a super weirdo. A super tomato weirdo.

Coconut Chicken Dinner Wednesday night

OK so the whole family is on board with the South Beach Diet. I have been having so much fun cooking that I have forgotten to post on the Blog! (Horrible, I know) We did a lot of perusing through the cookbook and various other blogs and I have to say, I was really excited to make this dish because it is the first time I have ever cooked with coconut milk. And I knew it would be really yummy. This plate is actually pretty big the peas were hard to finish but complemented the chicken really nicely. The Tamarind paste I picked up at a local east indian market. Try this recipe from the South Beach Diet Cook Book (the Orange One). It is RAD.

Taco Salad - Phase 1 Staple

In my house Tacos are a good standby dinner. Every one likes them, you feel really full when you are finished eating them, and now that I have learned how to make my own Taco Seasoning, I feel a little fancy about it too. Doing the South Beach Diet phase 1 we just take away the shell. It is really very delicious, but I did you a favor by taking a picture before I mixed it all up. You are welcome.

Crazy diet phase 1

So I'm trying the South Beach Diet. I'm on phase 1 and so far I really miss bread. And fruit. But not as much as I thought I would. I am actually really enjoying the way I feel, and I hope I can lose weight with it too. I'm trying to convince my family to do it with me so it won't be quite so hard. Hopefully they do. For now, I'm psyched to tell you I made my own salad dressing. And it was good! Just a simple vinagrette with herbs olive oil white wine vinegar chopped capers and some dijon mustard. Yum.

Who needs chicken?

Happy Friday! After a long day filled with work running errands and walking Greenlake, this is what I'm finally noshing on for dinner. Our original dinner plans fell through (long story), and so I was happy I had picked this little feast up from Trader Joes. It is perfect. I am actually quite pleased with the sparkling spanish white wine too! I'm sure I'll need another glass to really test it out. Thanks Jen for suggesting pairing the honey chevre with a rosemary raisin cracker , a little dot of this balsamic glaze on top and I'm in fancy cracker heaven.

Pea Nutty...

So my style of cooking is more "by the pants"....

I took frozen chicken & firm tofu...
I marinated both in a generic store bought peanut sauce all day...
I got frozen stir fry veggies at QFC..

I flash fried the drained chicken & tofu in veggie oil ....
put in strainer in a deep pan to drain...

Add a tbsp of peanut butter and cook the marinade down into a thicker sauce....about 10 mins

a couple splashes of chili oil & add the frozen stuff and fresh broccoli....

i soaked a thin rice noodle in cold water for about 20 minutes while i did all that ...

Toss the drained noodles into the peanut sauce and cook for 5 mins stirring....

Serve noodle mix & top with chicken/tofu...

People were almost done before they realized that tofu was in the meal.


I do wish i had not added the frying oil to the peanut sauce...

Black Bean Happiness

TONIGHT though, I am absurdly excited about making these black bean quesadillas . I'm not sure if I am just jazzed about making my own taco seasoning or what, but I have been looking forward to this for a few days now. Here are the ingredients - Camel mixed up the beans onion cilantro & hominy - since we didn't have any corn - while I was out walking Greenlake.

About 2/3 cup mixture in each Quesadilla
 All I had to do was Mix in the cheese and the Homemade Taco Seasoning - which I am (as I said before) ridiculously excited about
And Voila!! Black Bean Quesadillas with Sour Cream. I ended up with 10, we ate six and I am freezing 4 for later the way she suggests. I've never done this before, so we'll see how it turns out. Anyway, I am really in love with her blog, budgetbytes.blogspot.com and it was really fun to make these tonight.

Asian Chicken Salad

Salad again, I know. But I'm excited about this salad. Mixed greens, shredded carrot, sugar snap peas, chicken, red bell pepper, slivered almonds, crunchy onion strips, and spicy mandarin dressing. It almosts makes up for the crappy day I seem to be having......

Pork you're Apples....

it all began with an e-mail.....
some crazy recipe from some frugal gourmet .....

So i snap me this pic with MWSnap 3 and stick the picture right on my Sidekick 4g.
Ready to roll...
In a plastic container I mixed the following:
  • brown sugar 
  • cinnamon
  • nutmeg 
  • water
  • salt & pepper
  • butter
  • vegetable oil


I then added the 4 chops & plopped it in the fridge in the am!
I plan to cook this around 1700 on the grill instead of in a pan.
I also kept 2 chops for alternate grill action in the event of failure....
